Chronology of Tête de Moine AOP

1136 Construction of the Abbey of Bellelay
1142 Pope Innocenz II confirms the establishment of the abbey
1192 Cheeses manufactured at the abbey used to pay the annual rent
1347 The cheese production of the month of June is used to pay for the grazing leased by the abbey
1453 For four cheeses, the abbey purchases fields and gardens from the imperial notary Erhard Molitor
1570 The Abbot of Bellelay sends the Prince-Bishop of Basel two large cheeses of good quality and places his abbey under the bishop's protection
1628 First published description of Bellelay cheese

First mention of the designation "Tête de Moine" in the archives of the Department of Mont-Terrible
1797 The monks are evicted from the monastery. The cheese, however, continues being made
1856 The Tête de Moine is honoured at the "Concours Universel" in Paris

2004 The President of the Swiss Confederation, J. Deiss, offer a Tête de Moine AOP (PROTECTED DESIGNATION OF ORIGIN) and a Girolle® to the Japanese First Minister Koisumi during a official visit in Japan
