Since 1981, when the «Girolle®» was launched, sales of Tête de Moine AOP have increased by an average of 70 tons each year. In the last years production has almost doubled from 858 tons (in 1990) to 2'191 tons (in 2012). Roughly 58% of the cheese speciality is exported, but in progress.

In 2012 1'279 tons of Tête de Moine AOP were exported, 75% of which to Germany and France. Exports beyond the EU are of marginal importance.
