Cheese Dairy Corgémont
The cheese dairy Corgémont is a family business whose team consists of the cheese-maker's family, two other cheese-makers, two apprentices, a sales person on wheels and three part-time shop assistants. The cheese cooperative was first mentioned in the records in 1893, and in 1897 our dairy building was erected. During the course of the years a number of different cheeses were made in that building: first Emmentaler, later Le Gruyère. In 1992 the production of Tête de Moine AOC was begun which required major renovations and high investments. Roger Schwab took over the cheese dairy in 1998. |
