Cheese Dairy Courtelary
The cheese dairy Courtelary was set up in 1978. It is situated in the midst of the Bernese Jura, between the Chasseral in the south and the Franches Montagnes in the north. The present dairy was built in 1996 and consists of the dairy itself, a shop (open Monday, Tuesday, Thursday, Friday 7-12 am and 2-6.45 pm; Wednesday and Saturday 7-12 am) and a pigsty outside the village. The Wenger family took over the dairy in 1958. Since 1997 they have managed the site together with the Kämpf family, and the dairy has 2-3 employees. Twice a day 13 milk producers deliver their milk to the dairy; the milk supplied amounts to about 1,500,000 kg each year. Every day the milk from the previous evening and the one from the morning is processed to TÊTE DE MOINE (40-45% of the production or 60,000 wheels annually) and Erguel Jura (55-60% of the production or 13,000 wheels per year). Erguel Jura is a semi-hard cheese made from raw milk as well; it has a distinct taste and weighs between 6-7 kg. |
