Cheese Dairy Saignelégier
The Cheese Dairy Saignelégier was founded in 1995 and has become the largest of the nine Tête de Moine AOC production sites. With the new building our cheese specialists have been able to transfer and preserve the traditional values of Tête de Moine AOC making to that modern production site. The production manager, Jean-Philippe Brahier, and 9 employees process roughly 10 million kg of milk each year supplied by 80 milk producers from Saignelégier, Les Pommerats, Montfaucon, Clos du Doubs and Champoz. From that milk -characterised by its herbal aroma- about 1'000'000 wheels of Tête de Moine AOC are produced each year. The cheese is stored and cared for in the cheese cellars until put onto the market by the cheese dealer Emmi AG. An average of 230,000 wheels of the unique Tête de Moine AOC mature in our cheese cellar in Saignelégier. Individual visitors may pop in on Fridays from 3-5 pm, and during the summer and autumn holidays from Monday to Friday. Groups are welcome from Monday to Saturday upon prior phone of fax booking (phone +41 32 952 42 20, fax + 41 32 952 42 29). You may peek into the modern production site and watch a video about the art of making Tête de Moine AOC. Taste our cheese speciality on site and buy some yourselves.
