The cheese dairy Le Noirmont is a family business built in 1910. Since then is has gradually developed
by producing various cheeses. We now have 6 employees working in cheese production and maturing: two
cheese-makers, a skilled worker and three non-skilled workers. Two assistants serve our customers in
the dairy shop.
Le Noirmont has 26 milk producers with a total quota of 2,700,000 kg of milk. Those producers
are mostly situated in Le Noirmont and hamlets of the municipality like Le Peupéquignot, Les
Barrières, Le Creux des Biches, others live in the villages Muriaux and Les Emibois.
When Charles Kaelin bought the dairy in 1972, the cheese produced at that time was primarily Le
Gruyère and only very small amounts of TÊTE DE MOINE were made. When the paring device called «Girolle®» was
launched in 1982 the demand for TÊTE DE MOINE increased so rapidly that these days the production of TÊTE DE MOINE
is larger than that of Le Gruyère. Our cheese dairy annually produces about 200,000 items of
TÊTE DE MOINE (approx. 200 tons), 1500 wheels of Le Gruyère (approx. 51 tons), 300 items
of Noirmont (2 tons), 300 items of Franches Montagnes (2 tons) and about 4300 items of
Roc-Montès (1.5 tons). We also sell about 7,000 litres of raw milk each year.
Christian Kaelin and his wife Patricia took over the cheese dairy in 1997 and have continued
the cheese making tradition.
