Cheese dairy Le Noirmont has a long cheese making history. It was built in 1910 and has been initially producing mostly Gruyère and Tête de Moine. When it was taken over in the 1970's by family Kälin, production of regional specialties still produced and sold today was started by owner Charles Kälin. Charle's son Christian ran the family business until end-2015. Since 2016, milk-producer cooperative MIBA continues cheese making activity in Le Noirmont.

To this day, the dairy buys 3.6 million kgs of milk / year from 18 farms in Le Noirmont & around. It produces two AOP cheeses (Gruyère AOP and Tête de Moine AOP) as well as 3 specialty cheeses (Noirmont, Roc-Montès and Franches-Montagnes). 8 employees work at the dairy.

The current production facility in the centre of the village has progressively become too small, this is why cooperative MIBA will build a new site on Le Noirmont's outskirts. The new dairy, with a total surface of 1'270 square meters will be housing - in addition to modern cheese making facilities - a unique visitor area which will offer an interesting view to cheese making tradition. Opening due early 2019.
