Production and exportation
Since 1981, when the «Girolle®» was launched, sales of Tête de Moine AOP have increased by an average of 63 tons each year. In the last years sales have almost tripled from 858 tons (in 1990) to 2'673 tons (in 2020). Roughly 65% of the cheese speciality is exported, but in progress.
Exports by geographical market
In 2020, 1'746 tons of Tête de Moine AOP were exported, about 81% of which to Germany and France. Exports beyond the EU are of marginal importance.
