After more than 100 years cheese production in the dairies of Courtelary and of Corgémont. The two dairy societies have merged to build a new cheese factory in Corgémont, called Fromagerie de la Suze. The new infrastructure provided with solar panels and wood heating is functional since June 2016.

Twice a day 17 milk producers deliver their milk to the dairy; the milk supplied amounts to about 4,000,000 kg each year. Every day the milk from the previous evening and the one from the morning is processed to TÊTE DE MOINE (70% of the production), Erguel Jura and Le Sauvage. Erguel Jura is a semi-hard cheese made from raw milk as well; it has a distinct taste and weighs between 6-7 kg.

The cheese specialities can be tasted in the former cheese dairy of Corgémont.
